Seconding Triple Oxer’s lasagna-style deconstructed enchiladas. I’ve always found enchiladas fussy to make, but delicious to eat…so if you can just fill a pan with stacked layers of beans/tortillas/veggies(I’d saute them thoroughly so they don’t leave things soggy)/meat and then add sauce and cheese over top, that’s probably the easiest arrangement.

Also, that sounds amazing.
