Basic Beef Taco Meat

2 medium onions, diced fine

1 poblano pepper, diced fine

2 tbl minced garlic

½ tsp ground cumin

⅛ tsp ground cinnamon

1 tsp paprika

1–2 tsp ground ancho or chipotle chile powder

1 tbl dried oregano

2 tbl tomato paste

2 lbs ground beef

1 small can of tomato juice (alt: chicken broth, beer)

Sweat the aromatics on medium until they turn translucent. Add the spices & oregano and bloom them in the oil. Stir in the tomato paste & turn heat to high until it begins to turn dark. Add in the beef and break up with spoon. Brown meat, then add tomato juice & turn down to medium low. Cover & simmer for 10 minutes, then uncover and raise heat to medium high for 5–7 min to evaporate off much of the liquid. Drain meat in a colander to remove excess fat, then return to pan and check for seasoning. Add salt, pepper, sugar or chile powder as needed.
