A chili recipe that delights your taste buds, and scores a win for local Cancer Patient charity.

The Hancock County Cancer Patient Services Chili Cook-Off features 20 different chili recipes from local businesses across Hancock County, Ohio. Many companies have annual internal chili competitions for the chili to a feature for the company.

The recipe submitted this year features an excellent and hearty beef short-rib and bean chili with a thick consistency and few unusual ingredients that piqued the discerning judge’s pallet.

What Makes This Recipe Amazing

  • Using dried chilis enhances the base of the chili while avoiding the grainy texture of pre-ground spices. (less expensive too!)
  • Keeping the short ribs intact allows for better browning of the meat without overcooking and losing flavor.
  • Adding star anise and coffee help further enhance the flavor of the beef.
  • Finishing the pot with bourbon will ever so slightly added a smoked flavor, but more importantly, opens your pallet to enhance the flavor experience further.
