The SSD and RAM can be easily upgraded in most laptops so I recommend focusing on the right screen resolution and processor combo without worrying if it has a large SSD or RAM. Acer has a few models where the processor is a higher end i5/i7 and a 1080p screen, but comes with less RAM and a HDD instead of SSD. You could still buy that, and then purchase a SSD and more RAM separately. RAM you just pop in. The SSD requires you to clone the existing drive or install the OS yourself. Either way, not difficult and there are plenty of guides online.
