3 recipes: Raspados
Raspar means “to scrape” in Spanish, and it’s how Raspados got their name. In Mexico City, the ice is literally scraped off of a large block and then sweetened with vibrant syrups. Using fresh fruit purées, and the crisp agave taste of Milagro Silver, we’ve found a new way to enjoy the most refreshing summer treat.
A note: Not everyone has a snow cone machine on hand, although they are easily attainable for around $20 online. If DIY is more your thing, you can always crush the ice in a blender, shave it on a microplane, or use the grate setting on your food processor. Using the crushed ice setting on the fridge could even work in a pinch. We’re of the mind that an inexpensive ice shaver is a sound investment on any hot summer day. Try any of these, and we bet you’ll agree.
ZONA ROSA
- 2 parts Milagro Silver
- 1 part lime juice
- 1/2 part agave nectar
- 1 part strawberry puree
- 1/2 part kiwi puree
- 2 basil leaves
Garnish:
- 1 strawberry
- 1 basil leaf
Combine everything in a blender and blend until smooth. Using your method of choice, make your “snow” in a cone or rocks glass, and pour the purée over. Garnish.
LA MORADA
- 2 parts Milagro Silver
- 1 part lime juice
- 1/2 part agave nectar
- 1/2 part raspberry puree
- 1/2 part blueberry puree
- 2 mint leaves
Garnish:
- 1 rosemary sprig
Combine everything in a blender and blend until smooth. Using your method of choice, make your “snow” in a cone or rocks glass, and pour the purée over. Garnish.
MERCADITO
- 2 parts Milagro Silver
- 1 part lime juice
- 1/2 part agave nectar
- 1 part cucumber puree
- 1 jalapeño slice
- a pinch of cilantro
Garnish:
- 1 cilantro sprig
- 1 cucumber slice
Combine everything in a blender and blend until smooth. Using your method of choice, make your “snow” in a cone or rocks glass, and pour the purée over. Garnish.
