Cucumber with Minced Garlic

Here’s another no cooking required recipe.

  • 1 12" long English cucumber (chopped)
  • 1 clove of garlic (minced)
  • 2 tsp of apple cider vinegar
  • 1/4 tsp of salt
  • 1/4 tsp of crushed red pepper flakes

Directions: (1) Put chopped cucumber and minced garlic in a bowl. (2) Sprinkle salt and pepper flakes into bowl. (3) Pour apple cider vinegar into bowl and toss all together. (4) Serve after 5 minutes so flavors can marinate together.

I like to chop the cucumbers into faux tourné shape to make this cucumber dish look more interesting. To achieve this look, make your first cut on one end of the cucumber in a 45 degrees angle to the cucumber. Rotate cucumber a quarter turn before each following cut down it’s length. In the end you’ll get relatively even pieces in volume but in nonuniform shapes.
