The Orange Cream ginger bread tart

I liked the look and feel of the cookie; it looked like a cookie that came from a super expensive restaurant. I loved the texture of the center, it went very nicely with the orange cream center.

I wish the cookie portion way larger so that it could hold more of the orange cream ginger filling. It was so good! I also wish the cookie had some caramel on the top as well.

What if the cook had a glaze of crunchy hardened sugar on the outside of the cookie. Another idea might be to add a small piece of fruit on top of the cream.
