#Veganuary day 11

I am determined to eat three proper meals today.

Breakfast: 2 crumpets with marmite

Lunch: butternut squash, sweet potato and ginger soup. I roasted some chunks of both with garlic and ginger until it was soft, then blended it with veg stock and heated it through. It was too runny, so I added a handful of couscous to absorb some liquid.

Tea:

Left over Aduki bean casserole with linguine and cream cheese. I must get some vegan Parmesan style cheese.
