For Alinea it would be an understatement to say that Aaron from 10 Speed was critical in making sure that we got everything just right… and that Martin spent days and days kerning with a fine tooth comb. We also hired a third party recipe editor which was very instructive.

For this book we have done a much better job organizing recipes and content ahead of time — and we know now how to standardize recipes in a way we did not last time. Despite that I will likely pay someone to get a professional, third set of eyes on the final edits. Even with doing that it’s way cheaper to hire someone than to give up the % to the publisher.
