Apple & Lime Scrumpy

This is my take on ‘Turbo Cider’ which is essentially home-brewed cider that takes very little time and effort and is rather delicious.

Ingredients

  • 4 litres of your favourite apple juice
  • 200ml of lime juice
  • 1kg of caster sugar
  • 1 teaspoon of wine yeast (bread yeast could also be used)

Equipment

  • 5 litre container
  • Muslin cloth (for filtering)

Method

Ensure your 5 litre container is clean using some sort of anti-bacterial cleaning fluid such as Milton.

Pour the apple juice into the 5 litre container.

Add the lime juice and all the sugar.

Mix until the sugar is dissolved.

Add the yeast onto the top of the mixture and cover to keep bad bacteria out.

Keep the bottles your apple juice came in! You can use these later to store the finished product!

If using a demijohn, you can use the airlock, though a lightly unscrewed lid can work too. It’s important that the gases can escape while the mixture is protected from the outside world to some extent!

Leave this mixture for 10 days in a warm, dark place, gently mixing every couple of days to keep things moving.

After 10 days, clean and disinfect the bottles the apple juice came in, and decant the mixture into them through the muslin to filter out any yeast.

Enjoy on a summer’s day with a lot of ice!
