What does Omakase mean in Japanese?

Omakase is originated from the Japanese words “お任せ”, or “廚師發辦” in Chinese or “leave it to me” in English. It means to trust the chef’s judgment and let them decide what you are going to have. Omakase doesn’t have a long history. Traditionally, there are only “okimari” and “okonomi”. Okimari comes as a set, every time is the same. On the other hand, okonomi usually are selected from a variety of fish, the guest picks what they are desired.

Is Omakase always sushi?

The concept of omakase is quite common for those regulars at the neighborhood eateries. This is similar to having a bespoke cocktail made for you by your favorite bartender. It is a sign of trust and often also means a relationship. Omakase is not always sushi. Omakase originated to offer a meal tailored towards guests’ dietary preferences and restrictions. Later on to accommodate the cost and efficiency, most of the omakase on the market has become more like a Prix-fixe menu.

How long is omakase?

The price and length of omakase are subject to change depending on the restaurant you are dining at. Generally speaking, it usually takes from 1–2 hours.
