Lidl Challenge, Week 2

From Lidl:

There were no mushrooms on the day I went shopping.

A meal in three parts:

  • Courgette, potato and carrot with turmeric, pepper and salt
  • Tomato, sugar snap peas and mange tout with cumin and coriander
  • Banana with ginger and lemon juice

Very easy to make.

Peel potatoes, carrots and courgettes, then cut into small cubes. Heat coconut oil or ghee in a frying pan. Add carrots and potatoes. Fry on medium to high heat for a few minutes, stirring, then turn down to low. Cook uncovered for 10 minutes. Turn heat back up, add courgettes, fry for two minutes then back to low heat for five minutes.

Grind or crush black pepper and salt to taste. I used a teaspoon of peppercorns and half a teaspoon of sea salt. Add to the vegetables with one and a half teaspoons of turmeric. Stir in, cover pan and leave cooking on low heat.

In another frying pan, heat coconut oil or ghee. Slightly crush one teaspoon cumin seeds and one teaspoon coriander seeds. Alternatively use ready ground spices.

Cut a handful of the mange touts and sugar snaps into pieces. Scissors make this easy. Cut tomatoes into eighths.

Add cumin and coriander to the oil and stir for one minute over low heat. Add sugar snaps and mange touts. Cook for a few minutes, but try not to let them colour. Add tomatoes, cook undisturbed for five minutes. Cover pan and turn off heat.

I had to think of a way to use the banana. I hope you like ginger!

In a shallow dish or plate, mash together a banana and a teaspoon of ground ginger. I chose to keep it fairly lumpy. Stir in lemon or lime juice to taste. Use plenty as this will be an accompaniment, on the plate.

Cube some cucumber. Delicious with the starchy, spicy dishes.
