I usually pick something slightly related to the subject of the poem, or otherwise rather random. Your best choice then is to make your own coloured rectangle and paste it in after the poem. Just make sure it’s a min of 300 x 200 pixels. It’s easy to have one handy and alter the colour with your fav graphics app as you go. 
Alternatively you can take what you get and only alter it when you don’t like it. 
On the stock photo side, freeimages.com is pretty good ‘cuz they’re just photo enthusiasts rather than commercial offerings. Also archive.org has royalty free historic images never intended as commercial stock pics, if that aligns better with your philosophy. :)
