Recipe: how to cook Chinese food, Taiwanese Fried Chicken

Taiwanese Fried Chicken is one of the most popular Taiwan’s snacks. It is rich in flavour and crispy on the palate.

INGREDIENTS:

300g boneless chicken leg

Ingredients for marinating:

  • 1 tablespoon soy sauce
  • ½ tablespoon rice cooking wine
  • 5 cloves garlic for minced garlic
  • ½ teaspoon ginger powder
  • 1 teaspoon white pepper powder
  • ½ five-spice powder
  • ½ teaspoon salt

Coating flour paste:

  • 30g mixed flour, 5 flour: 1 cornstarch
  • 2g baking powder
  • ½ teaspoon five-spice powder
  • ½ teaspoon salt
  • water

Coating flour:

  • sweet potato starch (thick)
  • rice flour (optional)

Dip seasoning:

  • pepper salt powder or 2 five-spice powder: 1 salt
  • basil

INSTRUCTIONS:

Step 1: remove the bone and cut the chicken into small pieces.

Step 2: marinate the chicken for 1 hour.

Step 3: mix the coating flour paste, the suitable amount of water can make the paste drop.

Step 4: cover the chicken evenly with step 3.

Step 5: coat the chicken with the sweet potato powder (put some rice flour can make the fried chicken more crispy)

Step 6: heat the oil to 150℃, fry the chicken to slight golden colour. transfer out and drain the oil.

Step 7: fry the chicken in 200℃ over medium or high heat for 1 minute to golden colour and crispy. transfer out and drain the oil.

Step 8: wash basil and dry. fry to twist.

Step 9: put the chicken and basil together, mix with seasoning evenly. DONE❕
