Clams Chowder — Recipe
Ingredients:
- 1kg clams
- 4 slices bacon, cut into bits
- 1 onion, diced
- A cup of diced celery
- 2 cloves of garlic, chopped
- 2 potatoes, diced
- 1 cup corn
- 500 ml Clam soup or Chicken soup
- 1 cup Heavy cream
- 1 teaspoon thyme
- Fresh Parsley, chopped
- Salt and pepper to taste
Instructions:
1.Cook bacon in a big pot on medium heat until it is crisp. Reserve the bacon from the pot while leaving behind some bacon fat.
2.Add onions, celery and garlic to the pot; cook them over medium heat approximately for five minutes.
3.In addition to above step add diced potatoes, corns, clam soup or chicken soup in to the same pot; bring it to boil then simmer till potatoes are tender for about fifteen minutes.
4.Besides resumption of boiling process, which will be followed by simmering until potatoes become tender—this includes addition of clams into your pot with the heavy cream and cook further within next five minutes.
5.Add the condiments like thyme, salt as well as pepper to taste.
6.Check on seasoning before serving.
7.Serve hot garnished with crispy bacon and fresh parsley .
