Lotus Flower Tea

In the Netflix documentary series, Chef’s Table there is a chef that prepares Lotus Flower Tea. Jeong Kwan is a 60-year-old Zen Buddhist nun who prepares vegan meals for her community (and the occasional visitor) at Baekyangsa Temple in Korea
She makes temple food, she cooks without garlic, onions, chives, leeks, or scallions, foods that are said to excite the mind. Her food is gentle and calming.
One food critic describes her lotus flower tea as being so subtle, and so gentle, that it is almost nothing.
And that is what makes it unique, beautiful and good.
Almost nothing.
