A popular South Indian dish: Pudina Pulao

This delicious and minty Pudina Pulao is very easy to make. If you are looking a simple and easy recipe to make for lunch or dinner, then this Pudina Pulao is perfect. Accompany it with any raita and relish this yummy Pudina Pulao all by yourself.

Ingredients:
For Pudina Masala:
1 cup mint leaves
2 tablespoon coriander leaves
1/4 cup chopped onion
1-inch chopped ginger
5–6 garlic cloves
2–3 green chillies
1/4 cup grated
fresh coconut

For the rice:
4 tablespoons oil
1/2 teaspoon cumin seeds
2–3 cloves
4–5 black peppercorn
8–10 cashew nuts
1/2 cup sliced onions
1/4 cup chopped tomatoes
1/4 cup potatoes, peeled and cubed
1/4 cup chopped carrots
1/4 cup chopped French beans
1/4 cup peas
1 cup long grain Basmati rice
Salt as per the taste

Making of Pudina Pulao:
Take a blender and add mint leaves, coriander leaves, chopped onion, ginger, garlic cloves, green chillies, and grated coconut to it. Add some water and blend into a smooth paste. Add more water if required. Keep the paste aside.
Now, take a wide-pan and heat some oil in it. Once the oil gets heated, add cumin seeds and allow to crackle. Then add the black peppercorns, cloves, and cashew nuts. Saute until cashew nuts turn slightly brown.
Then add the onions and saute for 2–3 minutes or until brown. Then add the tomatoes and cook until soft and mushy. Then add the pudina paste and mix well. Let it cook for a minute and then add potatoes, French beans, peas, and carrots. Mix well and let it cook on high flame for 2–3 minutes or until masala gets dry.
Now add the rice along with 2 cups of water. Mix well and then add salt as per the taste and mix gently. Cover pan with a lid and let the rice cook. Then, turn off the gas and serve hot along with raita.
