Rich and enriching almond kheer recipe

In the Mughal era, kheer is used to be a delicacy for royals. Believe it or not, the same tradition is followed till now. In every Indian household, kheer is made on festivals, occasions or even to offer prasad to god. Kheer is such a minimalistic dish which requires fewer ingredients to prepare but taste better than any other dessert.

Here, to add more richness into the typical kheer recipe, soaked almond paste is used which adds more nutritional value to the dish.

Ingredients required to make almond kheer recipe

Milk — 2 litre
Green cardamom (powdered) — 1 Tsp
Saffron — 1 pinch
Almonds — 20
Sugar — 200 gram

For Garnishing

Almonds (sliced and slit) — 10

The process to make almond kheer recipe

First, clean and wash the almonds properly and then leave them soaked for overnight using enough water. Here soaking is the important process as it enhances the nutritional value of almonds and also makes it easier to cook.
Then peel off the almonds and grind them using a mixer grinder and make a fine paste. If the mixture is quite dry, then use little milk.
Now, take a pan and add milk. Boil the milk on a medium flame for around 10 minutes.
Then add almond paste and continue to cook on medium flame until milk reduced to half of its original quantity. Stir continuously.
Then add cardamom powder along with sugar and further cook the kheer for 10 minutes. To make the kheer more rich and thick, you can also add condensed milk or khoya.
When milk begins to thicken, then add saffron strands and stir well.
Switch off the flame and transfer the kheer into a serving bowl. Garnish with sliced pistachios an almonds.
Almond kheer is ready. Serve it chilled or at room temperature.
