For most practical purposes, as long as you have a security code on your iPhone or iPad lock screen (or you are using the thumb print identification) then these should be safe.

Passwords are a different issue. It is much more likely that someone hacks your account by cracking your password (or having your password on hand because of a data breach) than for them steal your phone or iPad and use it to access your accounts. So do be sure to update these passwords, even though it is definitely a chore as you said :)
