Milk Toffee

1 Tin Condensed Milk
1 Cup of sugar. (250ml)
2 Tablespoons of Butter

Mix the above in a. Deep Bowl (because it will boil over) and cook it on High for 3 minutes. Take it out, give it a good stir and return for a further 2 minutes 30secs. Repeat this procedure three times. more. (Cooking time 10 minutes in all) It is now ready to be dished into a buttered tray.

If you want a variation, add 1 teaspoon of cocoa and a little vanilla. Chopped cashew nuts. could be added on top of the toffee after it has been put on the tray.

Note. The time has been worked out for our 800w Microwave — you might have to adjust the time depending on the Power of your Microwave.

Potato Toffee

¾ lb mashed potato (weigh after mashing)
1 lb sugar
1 oz butter

Mix all ingredients in a deep bowl and cook on High for 6 minutes. Take it out and give it a good stir. Repeat this process twice more. (cooking time 18 minutes)

Add a handful of cashew nuts before spreading on a plate.

Thol-Thol

1 cup black rice flour
1 tin coconut milk (400ml)
Ghee
1 ¼ cup sugar
Flaked Almonds

Mix flour, coconut milk & sugar together in a deep bowl; cook on Medium for 6 minutes. Remove and mix with two tablespoons of ghee and cook again for 6 minutes. Remove and stir. Add the flaked almonds and cook again for 5 minutes. Spread on a plate, try and remove ghee with a spoon.
