I think it’s important to keep class in mind when trying to generalize about any population.

Yes, archaeologists definitely do need to be sensitive to questions of class. Wilson and Rathje were able to collect trash from individual households and after specific events (Thanksgiving dinners) which is hardly ever possible for antiquity.
And you’re right: on Sicily and elsewhere, in antiquity and today, history is written in the trash (and can be written from it, too).
