Review: So I’m just getting into bone broth. I acquired some beef bones from a friend who raises a couple cows for his family each year. I had only ever made bone broth once many years ago (before it was a fad), and I didn’t know what I was doing. I didn’t know at the time that it’s actually supposed to gel. I thought I did something wrong, so I threw the whole batch out. Little did I know it actually turned out correctly.
Anyhow, I bought this book to take in as much knowledge as possible about bone broth and how to make it. While I do like this book, I had a lot of questions that were not answered in her book. I had to Google many things. For example, it would have been nice if she briefly explained the different types of fats. She talks about the benefits of animal fats and how to render them, which is nice. And many of the recipes call for tallow or lard or ghee. But I had no idea what the difference between tallow and lard were. Seems something that could have very simply and very briefly been explained.
She also mentions that you can reuse bones to make broth 2 to 3 times. She mentions that it is good for your pets, but she doesn’t say if 2nd or 3rd run broth will gel the same, or if it’s not as good of quality, therefore only good for your pets.
It also would have been nice if she made a brief mention about store-bought bone broths. I purchase them by the carton at the store, but I never know if it’s quality or not. The bone broth that comes in the carton is not gel. Therefore, is it still good quality? Will you get the same benefits out of it as you would gelled bone broth? How do you pick a quality bone broth from the store? If most of them are only good enough for using in soups and other recipes, how do you pick one that’s good for sipping? Not everyone has time to make bone broth all the time, so this would have been a nice little addition.
I also did not know if It’s okay to have meat on the bones, and if so, how much is okay? After you’re done making bone broth, can you give the spent carrots and celery and any bits of meat to your dog? Can you leave the skins on onions? (Apparently you can, as it adds more nutrients to the broth and it gets strained out anyway). These are some of the details left out of the book.
I have made one recipe so far- beef broth. I followed the recipe, but left out the fennel. I don’t like the licorice flavor of it, and I wasn’t sure how much that flavor would carry over into the broth. Doesn’t mention anywhere how strongly the flavors come through if you don’t like certain produce. Although I do think it says you can omit things you don’t like. I cooked mine in my crock pot on low for 24+ hours as per the directions. The directions say it’s done when it’s a rich dark brown color. Mine never turned a rich dark brown color. I’m not sure if I used too much water, but I used enough to cover all the bones, like the directions say. I ended up turning my crock pot up to high for about an hour because low seemed like it wasn’t working well enough. On low, it never bubbled at all. I know you are not supposed to boil bone broth, but small to medium bubbles are okay according to the direction if you cook on the stove top. In order to get that, I had to put my crockpot on high for a little bit. The end result was kind of boring. All I could taste was strong celery initially. The next day, after it had cooled, it had a pretty neutral to bland flavor. In order to sip it, I have to add a little bit of Better than Bouillon seasoned vegetable base to make it taste like anything. But it did gel like it’s supposed to.
I know it sounds like a lot of negatives, but I still think this book is fairly decent for someone who has perhaps a little more knowledge than I do (until now). But if you are a beginner like me, be prepared to have to Google a fair amount of questions you’re going to come up with.

Review: I have just begun my reading about the health benefits of bone broth. Had not really heard of it before and so I have started educating myself on it’s use. I just recently received my copy of this book and after reading it found it very informational! I like the Conversion Tables in the back of the book for US Standard/Metric for Liquids, Dry ingredients, Weight Equivalents and Oven Temperatures Fahrenheit vs. Celsius, very helpful. Also like the list of the “Dirty Dozen” and the “Clean Fifteen” for those of us concerned about getting the best fruits and vegetables and wether or not we should make sure it’s organic or it’s safe to purchase conventionally grown. It also has a nice seasonal Vegetable Guide in the back as to what vegetables are in season at each particular time of the year.

The author gives advice on what types/varieties of bones to use, and where to look for a good local source. She also covers cooking vessels that are good for using and suggested different ways of preparing the broth, whether it is stove top, pressure cooker or slow cooker, I like the many different ideas for using broth not only for soups, but desserts as well! I am anxious to make my first batch!

I was not in agreement with lining a deep roaster with aluminum foil and then adding the bones for roasting so clean up would be a snap. We all know how dangerous it is to use aluminum and when it comes in contact with our food it destroys the nutrients, I would prefer to use a baking parchment paper. Review: I have been making bone broth sporadically for years and learned a few new tricks from this amazing book! I have tried many of the beverage recipes with the neutral broths and my favorite is the cranberry orange sparkler. Who doesn’t love cranberry orange? I also love all of the information about the history of bone broth, where to find bones, how to prepare the bones and veggies, the tools to use, how to cook the broth, how to store it, AND how to clean up after making the broth. Most importantly, I appreciate all the tips, tricks and recipes for incorporating life-building bone broth into my everyday routine.

My young grandsons love the apple and pear puree and the sweet potato puree (I have to admit, I do too!). They’re healthier than traditional jars of baby food and easier on their little tummies. I will be trying other purees for them as well. One of my favorite recipes so far is the Spiced Sweet Potato Pancakes with Toasted Pecans. They’re SO GOOD! and good for you. This book has inspired me to try several of the recipes out on my family and to try different types of broth. I’ve made friends with a local farmer in order to get good quality bones for my broth. My husband even bought me more Mason jars to support this renewed habit so that we can keep broth on hand at all times. The recipes and techniques in Quinn’s book are superb. She’s really brought it all together into an amazing art form.
