I completely agree the stock Health/Activity apps are lacking. Apple is generally good about providing a platform, then providing at least one solid example implementation on it. Maybe they’re spread too thin, or maybe they overestimated how much developers would be able to do with the information they have access to, but there’s simply no integrated “results oriented, with drill down details” kind of app that comes close to Fitbit, etc. Which is a shame, because it’s exactly those apps that demo so well what the hardware can actually do.
