What happens if the freelancer did a poor job and the company won’t pay for the inferior product?

I’m not a freelancer, but as a consumer of other services — I don’t often have the option of not paying for services that I don’t consider sufficient, whether it be a mechanic, house cleaning, etc.

My recourse is not hiring the person/service again and leaving a poor review online or with my circles. I’d imagine freelancers are sensitive to the former, if not the latter.

Of course, contracts could be structured with bonuses or penalties should specific milestones be deemed necessary.
