Making Popping Boba

If you’re using flavored liquids that don’t have calcium, like fruit juices, you should mix the liquid thoroughly with a small quantity of sodium alginate in its powder form. You should then drip the liquid into a container that is filled with a cold solution of calcium chloride.

As the teaspoonful of water drops into the bowl of vegetable oil, a little bubble of water is formed on the oil. Each of the drops of the alginate liquid then forms into smaller spheres in the calcium solution.

The reaction takes a few seconds while the calcium solution causes the outer layer of each sphere (the alginate liquid sphere) to form into a thin and flexible skin. The resulting products are the popping boba balls and are then removed from the calcium-containing liquid bath and rinsed into a bowl filled with ordinary water. They are then removed from the bowl of water and stored for future use in beverages or food.

The other question most folks would ask is, is boba vegan? Well, boba, in other words referred to as bubble tea, could be vegan. This is because it is made from tapioca, a type of starch that is obtained from cassava roots and used in puddings.
