Here is a quick and easy recipe which can be made with Shiitake, Maitake and White Button Mushrooms:-
Glazed Shiitake Mushrooms
· 1 pound Shiitake Mushrooms or any other edible Mushroom
· 1 teaspoon Coconut Oil
· 1/3 cup defatted reduced-sodium Chicken Broth
· 1 teaspoon Cornstarch
· 2 teaspoons reduced-sodium Soy Sauce
· 1 tablespoon Dry Sherry
Rinse the mushrooms and pat dry with paper towels. Trim and discard the stems. Cut each mushroom cap into 3 or 4 slices.
In a large non-stick skillet over medium heat, warm the oil. Add mushrooms and 2 tablespoons of broth. Cook, stirring often, for 5 to 6 minutes, or until the mushrooms are hot and start to give off liquid.
In a small bowl, dissolve the cornstarch in the remaining broth and stir in the Soy Sauce and Sherry. Add to the skillet. Cook, stirring constantly for 2 minutes, or until the sauce is clear and the mushrooms are glazed. Makes 4 servings.
