Mathias, I think this is the right way to approach the early stages. In my many Sketchnote workshops and mini Sketchnote workshops, I’ve found a diversity, but also certain patterns of attendees, that has helped me see who the people interesting in visual thinking are.

I’ve had some sense of UX people being interested, because that’s what my space is, but one group I didn’t see as clearly were teachers using sketchnoting as a way to open young students up in their classrooms.

It’s also a great test to see what works and what doesn’t work, so you can adapt your classes to get better and better. I’ve found that invaluable, and it makes the value rise over time.
