Cauliflower Rice is Underrated
this raw vegetable transforms into a hearty fried rice variation!

I’ve been raw vegan on/off for the past four years, but not having owned a proper food processor, I’d just stick to making raw spiralized pastas. that was until a week ago when Tony, our Super, gifted me a brand new processor & I’ve finally discovered how amazing cauliflower rice is!
this recipe is a vibrant take on one of my ultimate teen comfort foods, veg fried rice, which is typically super oily, processed and void of nutritional value. serving the cauliflower raw and oil-free preserves the integrity of food as Nature provides it; whole, complete and perfect in its intended natural state! although it is white, which can be a common sign something lacks vital life-force, cauliflower contains essential vitamins and minerals, enhances digestive enzymes, and has been linked to cancer prevention thanks to its immune boosting phytonutrients.
this recipe is bursting with flavor & texture! you’ll be thoroughly satisfied and nourished after a big bowl, so eat as much as you please and give thanks to our Mother Earth for such abundance!
gather:
cauliflower
bell peppers/capsicum
red cabbage *optional
peas
carrot
scallions/spring onion
cilantro/coriander
aminos/tamari
lime
miso paste
ginger
garlic
black pepper

make:
roughly chop and wash 1 head of cauliflower, then place in food processor with 1/2 tbsp miso paste, 1 clove garlic & a good slice of ginger. shred into fine, rice-like texture.
wash and chop carrot, red cabbage, peppers & scallions into small bite sized pieces. finely chop cilantro and lightly cook peas (if frozen) in some boiling water.
mix all ingredients in a large bowl, adding a squeeze of lime and generous dashings of tamari & soy aminos over the top (I really like the taste combination of these two, but either one or the other works perfectly). finish with some cracked black pepper.

simple huh! and so delicious. but I’ll give you fair warning, cauliflower rice can be pretty messy so take your time and enjoy the process of creating!
