oh yum! the hardness of them might not be ideal, but it could work if you have a high-power blender like a vitamix, in which case I’d probably chop or grate them up first. have you tried just eating them grated onto salad?

either way, I would say just give it a go! doing something new and different is a sure way to stumble upon magic…
