Spicy Carrot & Lentil Soup

Method: Combine 4 medium-chopped carrots, 1 cup of dried red lentils, 1 medium-chopped onion, 2 minced garlic cloves, 1 cup of vegetable stock, 1 tsp ground cumin, ½ tsp smoked paprika, and ¼ tsp chilli flakes in a microwave-safe bowl. Cover loosely and microwave for 12 minutes until the vegetables are soft and the lentils are tender. Puree with a stick blender until smooth; season with salt and pepper to taste.

Nutritional Benefits: Carrots are packed with beta-carotene, supporting eye health and immune function. Lentils are rich in protein and fibre, aiding digestion and providing sustained energy. Onions and garlic add antioxidants that support gut health and enhance immunity. Spices like cumin, paprika, and chilli flakes contribute anti-inflammatory properties and add a warming, spicy flavour.
