Stuffed Capsicum

Method: Mix 1 cup of cooked rice, 1 can (400g) of drained and rinsed black beans, 1 chopped onion, 1 chopped tomato, 1 tsp cumin, 1 tsp smoked paprika, salt, and pepper in a bowl. Cut the tops off 4 medium capsicums and remove the seeds. Stuff the capsicums with the rice and bean mixture. Preheat the air fryer to 180°C. Place the stuffed capsicums in the air fryer basket and cook for 12–15 minutes until the capsicums are tender and slightly charred on the edges.

Nutritional Benefits: Capsicums are high in vitamin C and antioxidants, supporting immune health. Black beans provide protein and fibre, promoting satiety and digestive health. The addition of rice adds complex carbohydrates for sustained energy.
