Super Soup

Method: Combine 2 cups of broccoli florets, 1 cup frozen peas, 2 cups baby spinach, 1/4 cup rinsed quinoa, and 4 cups vegetable stock in a large microwave-safe bowl. Add 1/4 tsp garlic powder, 1/4 tsp black pepper, and salt to taste. Cover loosely and microwave on high for 15–18 minutes until the vegetables and quinoa are tender. Stir in 2 tbsp chopped pistachios before serving. It is optional, but I normally drizzle a tiny bit of natural maple syrup before serving to add a contrasting sweet ness— not too much, though.

You can fully or partially purée this soup or just leave it as is, depending on your preferred consistency.

Nutritional Benefits: Broccoli is rich in vitamin C and fibre, which support immunity and digestive health. Peas are a plant-based protein source, also providing folate for healthy cell growth. Spinach is high in iron and vitamin K, promoting red blood cell production and bone health. Quinoa is a complete protein with all essential amino acids, and its fibre aids digestion. Pistachios add healthy fats and antioxidants, supporting heart and brain health.
