The best and worst broccoli cookie recipe on the internet

A #PinterestFail award winning recipe of basic cookie dough with candied broccoli chips.

Veggie Desserts has a recipe for romanesco, lemon, and cardamom cookies, which actually sounds quite tasty, but as far as I can tell there is no recipe online for broccoli cookies. If you are making this recipe start a day in advance to give the candied broccoli time to dry.

  1. Candy two heads of broccoli. I only used the florets because the stems don’t look like broccoli when diced. I tripled this Canadian Living recipe for candied fruit and added half a teaspoon of salt: Cut the broccoli into small florets. You’re going to be using these candied florets like chocolate chips, so make them small. Boil the florets in 4.5 cups of water, 1.5 cups of sugar, and a teaspoon of salt, for about an hour. Take the florets out of the water and lay out to dry overnight.
  2. Make Cookies and Cup’s perfect cookie base (3/4 cup butter, 3/4 cup brown sugar, 1/2 cup granulated sugar, 1 egg, 1 tbsp vanilla, 1 tsp baking soda, 1 tbsp cornstarch, 3/4 tsp salt, 2 cups flour), and add the candied broccoli as though it were chocolate chips.
