It looks really cool, you might consider the option to assert with Hamcrest matcher and maybe also the option to get the current value in order to check just part of the value, for example, if you have a big and nested POJO and you want to verify just part of the POJO and you don’t care about the rest.

The way that I use LiveData is a bit different than the way you use in the examples in the GitHub repo, I'm hiding from the public API the LiveData with my own abstraction so it’s harder for me to use your lib but if I’ll change this habit and use the directly the LiveData you way is really useful.
