Ingredients:

  • 1/4 cup (4 tablespoons) unsalted butter

  • 2 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 2 cups milk (whole or 2%)
  • 2 cups shredded cheddar cheese (sharp or mild, depending on preference)
  • 1/2 cup heavy cream (optional, for extra creaminess)
  • Salt and pepper to taste
  • Optional toppings: crumbled bacon, chopped green onions, or croutons

Instructions:

In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onions and minced garlic, sautéing until the onions become translucent.

Sprinkle the flour over the onions and garlic, stirring constantly to create a roux. Cook for 1–2 minutes to remove the raw flour taste.

Slowly pour in the chicken or vegetable broth while continuously stirring to avoid lumps. Add the milk, and bring the mixture to a gentle simmer.

Allow the soup to simmer for about 10–15 minutes, or until it thickens slightly.

Reduce the heat to low and gradually add the shredded cheddar cheese to the soup, stirring until it is completely melted and well incorporated.

If using heavy cream, stir it into the soup to add extra richness and creaminess.

Taste the soup and season with salt and pepper to your preference. Be cautious with the salt, as the cheese already contains some saltiness.

Once the cheese is fully melted and the flavors have blended, remove the soup from the heat.
