Honey Glazed Baby Corn and Bok Choy In A Soy Gravy
150 gms Baby Corn, washed and halved
8–10 Bok Choy Leaves, washed and cut lengthwise, stems cut separately lengthwise
1 Big Onion, cut lengthwise
3 Cloves of Garlic, chopped semi-fine
2 Tbsp Soy Sauce
2 Tbsp Honey
2 Tbsp Olive Oil
Salt to taste
In a pressure cooker, put the halved baby corn, cover it halfway with water add a dash of salt and cook it for 3–4 minutes. Keep it aside.
While the baby corn is cooking you can chop up the bok choy, garlic and onions.
In a Wok add the olive oil, chopped garlic and onions and fry them until golden brown.
Add in the bok choy and fry this on a medium flame for about 3 minutes.
Add in the boiled baby corn and 3–4 tablespoons of the cooking water used to boil the corn. Fry this on a high flame for about a minute, till the water dries up a bit.
Lastly add in the honey and soy sauce and on a high flame fry the whole mixture for a minute. Turn off the gas and serve hot.
