There are some normal cafes left in SF, and I quite like them. The only ones millennial hot-shot founders ever want meet in, though, are tall-ceilinged establishments with hardwood floors that only do pour-overs. San Francisco had plenty of small local working class joints when I moved in 1997. Now it has far fewer. The change in the coffee culture is in alignment with the economic and demographic changes, for better or for worse. :)
