ingredients :
250 gms fresh green chillies washed dried thoroughly & slit into two halves
4 to 5 medium sized lemons cut into 8 pieces each . And juice of one lemon that is to be added after all the ingredients have been thoroughly mixed.
Peeled and grated ginger juliens about two inches
carom seeds ( Ajwain )
fennel seeds ( saunf)
mustard seeds ( rai )
Fenugreek seeds ( methi ) each about 3/4 teaspoon , dry roasted and coarsely powdered.
Salt 2 to 3 teaspoons ( or according to taste , and it has to be slightly on the higher side, it acts as the preservative as this recipe has no oil .
Termeric powder and red chillie powder are optional and if u wish to add them then use about half a teaspoon each .
Two teaspoons vinegar .
Wash wipe and dry the green chillies thoroughly . Mix cut lemon pieces and ginger juliens .
Add the dry roasted powder and salt .
Add vinegar at last and mix it up well .



NOTE :
(DO NOT TOUCH WITH YOUR HANDS USE A WOODEN SPATULA OR WOODEN SPOON FOR MIXING , & STORE IT ONLY IN GLASS BOTTLE)
U may even add all the ingredients directly into the glass bottle .
Shake it up well and place it under sunlight for two days . Keep shaking it up well every now n then .
Ur instant chillie pickle without a single drop of oil is ready to use.
( To be stored in glass bottle only and it needs to be refrigerated . Can be easily stored for about ten days , give it a shake now n then . )
