Garlic-Roasted Brussel Sprouts

For those of you who fear veggies, there are plenty of ways to make them tasty and easier to eat. Here’s my recipe for mouth-watering oven-roasted brussel sprouts.

(NOTE: This picture contains other veggies which require different cooking times/temperatures — this recipe is just for the sprouts!)


  • Large package of halved brussel sprouts
  • 6 tablespoons of olive oil
  • 2 or 3 cloves of garlic, minced
  • thyme, oregano, salt (or mixed Italian seasoning)
  • spray olive oil (or other anti-stick agent)


  • Preheat oven to 350 degrees
  • Make sure all brussel sprouts are cut in half
  • Get a large baking tray, spray with olive oil spray
  • Place brussel sprout halfs flat-side down on the baking tray
  • Mix olive oil and minced garlic in a small bowl
  • Drizzle (or brush olive oil mixture over the brussel sprouts
  • Season heavily with thyme, oregano and salt
  • Bake for 20–40 minutes (check every ten minutes)

Finished brussel sprouts should be slightly crispy and browned on the outside and soft on the inside. Don’t be afraid to use more (or less!) olive oil and garlic according to your taste — in my experience, more is better ;) Serve with a meal or with toothpicks as a healthy (but delicious) appetizer.
