Year of the Noodle.

I don’t know about you. But, I know a little bit about me. And what I know, is that I love Thai food. Well, more like a specific dish that is actually Korean. But, I only eat it at this Thai restaurant minutes from my residence. Just thinking about it now, mentally thunders euphoria!

The dish is, chapchae or more specifically beef chapchae. I even like the name, Chapchae. Japchae. Chopchae. I could say it five times fast times two. I even dated a girl named Chae, without the chap and it was good too. But, that’s for another blog.

Specifically made around the 17th century for a king from the Joseon Dynasty. And wouldn’t you know it, I feel like I could totally run a dynasty after this meal. The Diaz Dynasty, doubly delightful. Carrots, onion, spinach, mushrooms stir fried in sesame oil. Sweetened with soy sauce and sugar. Yum! I eat it so fast you’d think my teeth were wearing a pair of Ni-keys worn by Usain Bolt. Superfast.

I can’t stop thinking about it. People tell me it’s best to write things down of what you’re thinking about, occupying your mind, when you are trying to clear your head. I wish I could do that with the rest of the stuff in my life. Seeing my laundry basket, my parking ticket, or that guy with a pineapple-apple pen. Just scribble it down on a piece of paper if that still exists and fuhgettaboutit.

Anyway, I think i’ve gotten it completely out of my head by now. Most of it has entered my stomach. *unbuttons pants* Until next time, readers.
