Tofu with Fresh Veggies and Corn on the Cob

With a Side of Cottage Cheese & Tomato Slices and Cranberries & Cinnamon Almonds 


Today I had fresh zucchini, squash, onions, and sugar snap peas that were packaged by the local grocery store. This is what I decided to make for dinner!

  1. Press Tofu between two plates for 1 — 2 hours
  2. Boil Water for Corn
  3. Cube Tofu
  4. Cook Tofu on the pan until it starts to brown
  5. Put Corn in boiling water for 4 minutes
  6. Saute Fresh Veggies for 2 minutes; add tofu for last minute
  7. Top veggies and tofu with 1 — 2 tablespoons of Parmesan Cheese

Today I also had cottage cheese with sliced tomato and cranberries with cinnamon almonds.
