When I first stepped into Shalimar Cuisine of India I was welcomed with immediate warmth, not just from the warm and friendly staff, but also from the smokey scent of spices that infused the place. As a long-time fan of Indian food I’ve had the pleasure of trying a variety of restaurants, from street food stalls in Delhi as well as the most luxurious dining establishments in Mumbai. Yet, none could have captured India’s essence as India like Shalimar did.

A Personal Journey

What makes Shalimar special? It’s like a return to home. For those who grew up hearing stories of my grandparents and their adventures in the kitchen all over the world, walking into Shalimar was similar to listening to the stories. From the scrumptious Punjabi dishes that brought back memories of my grandmother’s kitchen, and the fragrant aromas from Kerala my grandfather would often boast about it all being there.

Memories On A Plate

First thing that I tried the first time was Paneer Tikka. The deliciously softness of the paneer paired with the tangy marination brought me back to the barbecues I used to have as a child. The Goan Fish Curry? A beautiful combination of flavors from the coast that made me think of my visits to India’s west coast. Being a vegan, I enjoyed a variety of options thanks to the selection of vegetarian dishes.

The Artistry of Tradition

The thing that struck me the most is the authenticity. The chefs of Shalimar don’t only serve as chefs cooking food, they’re artists who are keeping the ancient techniques that were handed down through generations. Hand-crafted clay ovens, as well as hand-crafted grinding stones, all demonstrate an unwavering respect for the traditional methods of the past. There’s a more modern way of serving, making every meal appealing to the eye.

The Sweetest Finale

As a big sweets lover, I couldn’t refuse to try the Gulab jamun. The golden orbs coated in syrup melted into my mouth. And the Kheer? It’s as cozy as a hug in the bowl, with the scent of cardamom and saffron sweeping across.

Shalimar’s dining experience at Shalimar isn’t just about filling your stomach, it’s a journey. It’s about stories shared over biryani in a bowl and the laughter shared over the samosas and memories created by every bite.
