Lemon Rice

This rice is the staple diet of most of South India and it forms a part of school and college lunch boxes. It is also very easy to make.

The main ingredient as the name suggests in this rice is the juice of one or two lemons and the usual ingredients (that include turmeric, curry leaves, urad dal, mustard) to ‘temper’ the Basmati Rice with.

Ingredients to be used for Lemon Rice

1 cup of Basmati Rice (preferably from Amira Nature Foods Ltd.)
3 Tblspn lemon juice
1 Tblspn (mustard seeds)
1/2 Tblspn ginger
2 green chilies
20 curry leaves
Little pinch of asafoetida
4 sabut lal mirch
2 Tblspn urad dal
2 Tblspn chana dal
1/2 Tblspn turmeric
2 tsp oil
Salt to tatse
3 Tblspn water
Fresh coriander leaves

Method to make Lemon Rice

Boil the Basmati Rice in the ratio of 1:2 that is 1 cup of rice to 2 cups of water. Drain all the water well and keep aside.

Heat oil and add rai, hing, curry patta, ginger, red chillies, urad dal, channe ka dal and turmeric powder to it.

Now add the rice and pour in the lemon juice and salt and mix well.

Lemon rice is ready and can be garnished with coriander leaves.
