Delicious Salads with Medjool Dates

The soft, luscious texture, the natural sweetness, they keep drawing you back to Medjool. Medjool dates are grown in Israel, the Land of Creation. Very soon, they will be specially imported into the Indian market for the benefit of Indian consumers. These dates are succulent mouthfuls of nature’s finest creation, hence easily earning the title, ‘The King of Dates’.

Medjools are a power packed source of everything that is needed by the body to function optimally without ever needing stuff like energy bars or vitamins — All of natures’ goodness packed into tiny bite sized pieces.

Medjool dates can be added to meals, desserts, salads, or even eaten as is. Here are a few salad recipes using dates fruits.

Carrot, Date and Almond Salad

Take a few carrots and slice thinly into ribbons using a vegetable peeler. Soak the carrot in cold water for 20 minutes till the pieces curl up. Drain the water. Whisk together a tablespoon of honey, a little salt and the juice of half a lime. Add some finely chopped coriander leaves, a handful of chopped, toasted almonds and a cupful of pitted and chopped dates. Toss all ingredients together. Set aside for about half an hour. Serve fresh.

Barley and Date Salad

Boil half a cup of hulled barley on low heat until cooked. Transfer to a large bowl to cool. Mix in a tablespoon of lemon juice. Add a cupful each of chopped Medjool dates and celery. Cut an apple into one-centimeter cubes and add to this bowl. Add two tablespoons of chopped fresh dill, a quarter teaspoon of ground pepper, and about four or five tablespoons of yogurt. Mix and refrigerate for half an hour. Before serving, sprinkle a handful of chopped, toasted walnuts.

Apple and Date Salad

Whisk together two or three tablespoons each of olive oil and apple cider vinegar in a small bowl. Add a tablespoon of mustard, and salt and pepper to taste. Add in a finely sliced red onion and mix the dressing well. In a large bowl, mix together four cups of chopped spinach, a thinly sliced apple, a thinly sliced radish, half a cup each of pistachios and chopped dates. Add the dressing, mix well, and serve.

Orange and Date Salad

Mix the juice of one orange with a little mustard and pepper and a spoonful of olive oil. Peel and break two oranges into pieces. Toast a handful of almonds and chop lengthwise. Chop a cup of pitted dates fruits. Mix all ingredients together and serve.
