Craving Summer — and this Creamsicle Mimosa

I adore summer. I do love Seattle no matter how rainy it gets, but I practically salivate for those warm, sunny days that give me extra hours of daylight for kayaking, gardening, and sipping blackberry tea on the front porch. Although we’ve had a little taste of warmth the last few days, I know it’s fleeting.

The last two years were our first in our new house and I spent far too much time after work lounging in the backyard hammock with my face in a book or staring up at the 85 foot maple that towers over everything in sight. I’ve been gazing at the lumped up hammock in the laundry room lately, just itching to put it back up. But I know that no amount of gazing or wishing on my part will make summer come faster.

I suppose all I can do for now is channel summer through a little treat once in a while. This Creamsicle Mimosa is something we came up with last year at the beach cabin. It’s basically a dessert, but hey, there’s orange juice in it so I bet you could make a case for drinking it at brunch.

Creamsicle Mimosa — makes 1 drink

  • 2oz orange juice
  • 2oz champagne
  • 1/2oz vanilla syrup
  • 1 tsp vanilla ice cream

Directions: Gently mix the liquid ingredients in a fancy glass. Top with ice cream. Drink up!
