Hi Bret! You have a valid point, at-least from my point of view. Because like you, me too fan of simplicity of Vuejs. At-least for Data binding and making reactive elements Vuejs is perfect choice.

Right now, I am too at cliff thinking to learn Angular 2 or React Js or continue my learning in Vuejs.

Laravel and Vuejs is perfect combination to create any RESTful API app easily.
