It may be sad that summer is coming to an end but getting back into a routine can be fun - especially when it comes to bringing some creativity to packing your lunch! No need for the same sad sammies or salads in your lunchbox each and every day. Here’s a little inspiration to change things up this fall so you don’t get stuck in a lunch rut — whether you are taking your lunch to work or school, try out these recipes to bring a better lunch this year.

Tuna Salad- With a terrific tuna salad recipe you get two fun lunches in one! Take it with crackers or go traditional and make it into a sandwich. Either way your taste buds will thank you.

2 (5 oz) cans of Tuna, drained
1/4 cup Sir Kensington’s Classic Mayonnaise
2 tbsp celery, minced
2 tbsp red onion, minced
3 tablespoons finely minced red bell pepper
1/2 tbsp Sir Kensington’s Dijon Mustard
Salt and pepper, to taste
Freshly squeezed lemon juice
Kosher salt and freshly ground black pepper to taste

Drain the cans of tuna and place in a mixing bowl. Chop up the veggies and add to the bowl. Add the rest of the ingredients and stir together.

Mason Jar Salad- Look at all those lovely layers! With such a great dressing you can change up the veggie mix every day and still not get sick of this light lunch.

1/3 cup white wine vinegar
2 cloves garlic, minced
2 tablespoons finely chopped fresh herbs, such as parsley, basil, tarragon, dill, mint
1 tablespoon Sir Kensington’s Dijon Mustard
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup olive oil
Assorted veggies

Combine dressing ingredients, add into the mason jar, layer with veggies, seal and enjoy at lunch!

Protein Pack- Such a simple lunch to throw together and no recipe needed! This keto compliant lunch will keep you going for hours so you don’t hit the midday slump.

2 hard boiled eggs
1/2 avocado sliced
Berries
Turkey
Provolone
Condiment of your choice to dip

Chicken Fingers- This childhood favorite can never be outgrown. Make them ahead of time for an easy-to-throw-together weekday lunch. The only stress you’ll have in the morning is choosing what condiment you will bring to dip!

1 1/2 cups panko breadcrumbs
1 egg
1 tbsp Sir Kensington’s Classic Mayonnaise
1 1/2 tbsp Sir Kensington’s Dijon Mustard
2 tbsp flour
1/2 tsp salt
Black pepper
1 lb Chicken Breast

Preheat oven to 400F and bake the breadcrumbs for 5 minutes. Combine everything else but the chicken into a bowl and mix. Add the chicken to the batter then coat in the breadcrumbs and bake 15 minutes.
