Pork Carnitas Nachos

Before we begin, you should know that this is nacho typical appetizer. Here at HQ, we love fresh takes on family favorites like these delicious Pork Carnitas Nachos! They’re best enjoyed with company, of course, but it’s okay to hog them all. Read on to spice up your life with this avo-control recipe!


For the pork:

3 lb Pork Loin
1 head garlic
3 limes
adobo sauce

For the toppings:

brown rice
tortilla chips
black beans
shredded cheese — monterey or cheddar
1 lime
pico de gallo
pickled jalapeños

  1. Make 1/2-inch-deep slits on the outside of the pork; stuff with garlic. Place pork in a 3 1/2-qt. slow cooker. Sprinkle pork on all sides with cumin.

2. Combine lime juice and adobo sauce. Pour mixture over pork. Cover and cook on High for 6 to 8 hours or until pork is tender.

3. Remove pork from slow cooker; shred with 2 forks. Combine shredded pork and 1/2 cup cooking liquid; toss it up!

4. Preheat oven to 350°. Coat a large rimmed baking sheet with nonstick spray. Arrange chips on prepared sheets and top with cooked brown rice, black beans, and shredded cheese (monterey or cheddar). Bake until cheese is melted, 20–25 minutes. Sprinkle with cilantro, radish, lime juice, pico de gallo and pickled jalapeños. Finally, drizzle with Sir Kensington’s Avocado Ranch.
