How We Give Character to Our Condiments

Sir Kensington’s mission is to bring integrity and charm to ordinary and overlooked food. Nowhere is that more apparent than in our products and in the lengths we go to make them.

Our Products

For any new product, we start with taste — taking inspiration from ingredients like vine-ripened tomatoes and starting with homestyle recipes. We consider how we can bring our own Kensington Quality through taste, ingredient ingenuity, and experience. Take our Fabanaise for example, we pioneered the use of aquafaba — a mostly unknown ingredient at that time that was being used by home cooks to make meringues — as the egg replacement in a vegan mayo.

Our Ingredients

If it isn’t food, we don’t want it in our food. In line with our value of long term thinking, we commit to never using genetically modified ingredients in order to protect and preserve a resilient food system for generations to come. That being said, we’re just as proud of what we don’t include in our products. We look to food before it was transformed by industry for inspiration and use traditional ingredients like citrus, salt, and vinegar — never chemicals — to keep our products fresh.

Our Suppliers

Of course there could be no condiments with character without our suppliers. Partners that share our values allow us to build long term relationships that are reliable, flexible, scalable, and provide transparency in our supply chain (with the chicken blooper videos to prove it). From farmers to our production facilities, we seek suppliers who show care and respect for their employees with fair labor practices and with humane treatment of any animal. We are proud to be the first to use Certified Humane eggs in our mayonnaise. We firmly believe that happy hens lay tasty eggs that make a better tasting mayo.
