Tempeh BLT Stuffed Avocado Boats

At Sir Kensington’s we do things differently. Rather than another BLT recipe this tomato season, we decided to make TLT (Tempeh Bacon, Lettuce, and Tomato) Stuffed Avocado Boats instead. Yes, we’re going meatless and using the avocado’s handy bowl shape to create a spin on your traditional BLT.

Today we aren’t using just any Vegan bacon…but our favorite tempeh bacon from Tofurkey. Tempeh is in the same family as tofu, but is made of fermented soy beans. This gives it great flavor that makes a mean bacon replacement. Tempeh also has about double the protein of tofu!

There is nothing like knowing a delicious Vegan BLT awaits in your lunch bag to help get you through the day. The smokiness of the “bacon,” the freshness of tomato and lettuce…oh and of course some of our fabulous Fabanaise!

We recommend it for lunch, an easy weeknight meal, or whatever floats your avocado boats.

Ingredients:
½ pkg Tofurky Tempeh Bacon
Two large avocados
6 cherry tomatoes
2 romaine leaves
2 tbsp Sir Kensington’s Classic Fabanaise
¼ tsp salt
¼ tsp black pepper
½ tsp garlic powder

Instructions:
1. Cook the tempeh bacon according to package directions. Set aside and let cool while preparing your other ingredients
2. Halve and pit your avocados. Remove some of the flesh leaving a ½ in. layer of avocado in the shell. Add removed avocado to large bowl.
3. Quarter your tomatoes, slice lettuce and tempeh bacon. Mash the avocado, leaving barely any chunks. Add in the rest of your filling to the bowl as well as your Fabanaise and seasonings. Mix to combine and distribute evenly to each avocado boat.
